Development of a semi-industrial prototype for processing bitter quinoa grains, based on a spouted bed (LFTS) (2014- )

The present research aims to develop an optimized spouted bed prototype at semi-industrial scale, with a processing capacity of 10 qq/day, for the removal of saponins from commercial and bitter varieties/ecotypes of quinoa, in order to obtain a debittered quinoa grains of quality suitable for export.

This research work uses the results obtained to date at laboratory scale at the CIAA-CIPI, which have demonstrated the technical feasibility of the process, studying the efficiency of the removal of saponins depending on some additional geometric variants.
